Oh, and about pancakes, I make them on the griddle and they usually come out all right, I use a German recipe though, lots of eggs...

Just made myself a delicious hamburger. 80/20 beef mixed with some Montreal steak seasoning, fried in a cast iron skillet, on a toasted sesame seed hamburger bun.
Simple, yet effective.

I would really like to cook more with Tofu or Soy Chicken, any good recipes? Oh, Dani, here is my very authentic, simple but delicious Chinese Tofu recipe that I cook whenever I get the chance to buy some decent tofu in the Asian Store: Fry some spring onions and some flakes of dried chili in oil, add the tofu cubes (I cut them in pieces of ca. 1,3 cm). Then let it simmer for a while. The tofu needs to be firmly dried since otherwise a lot of water comes out during the cooking process, but you probably know that. Add tinily chopped ginger and garlic on top, you can cover the frypan at that point and leave it for a couple of minutes. In the end, add salt and soysauce. Be careful with the salt since the soysauce is very salty anyways. The important point about this dish is that the oil should be enough (not covering the tofu of course but more than the 1-2 TS that they usually write in the recipes) and hot enough so the tofu gets brownish and crispy on the outside but remains soft and juicy inside. Also it should not be moved and stirred all the time, because then it doesn’t get crispy. It doesn’t always work out though, but when it does, it’s just delicious. Love pancakes - I also like them filled with white asparagus in bechamel sauce, can't wait for asparagus season so start.
Tonight it is pasta with fried salmon, green asparagus, peas,zucchini, broccoli in cream and white wine sauce, topped with freshly grated parmesan cheese and basil leaves.
Oh, the Mapo Tofu dish looks very appealing! I'll try that next!

Oh loreley, given the description of your dinner, you must be a true maîtresse de haute cuisine! Your dinner sounds fantastic! I‘ve never heard of pancake with asparagus. Is that a local dish in your region?

Made lo mein noodles. I'm going off memory, but, cooked a package of Chinese chow mein (close enough) noodles, stir fried some chicken thigh pieces, cabbage, carrot, onion, and a sauce of soy, oyster sauce, mirin, sherry, garlic, ginger, and sesame oil, with cornstarch. Mixed all that shit up and made a pretty decent dinner. Should've bought more noodles, though, it wasn't enough and I was still hungry.

it is actually - I'm in the Pfalz region near the hotspot for white asparagus and there are all kinds of recipes for it. The classic version is asparagus with brown butter or Sauce Bernaise plus potatoes plus schnitzel,but I like the stew version where you make a fond with the asparagus peel and use that for the sauce, it provides an intense taste. The pancakes can be made with some herbs in the mix and I also use sparkling mineral water for them to make them fluffier.

I mix 2 lbs of ground beef with a packet of meatloaf seasoning, breadcrumbs, an egg and some ketchup. I mix it really well and then bake it at 350 for about one and a half hours. I make 2 smaller loves so it bakes faster. pam, Never have bought meatloaf seasoning. What's in it? I just usually use garlic, onion, salt and pepper,oats,egg,ketchup and sometimes green peppers & mushrooms The best I've ever made and when is "Good Eats" meatloaf but complicated and many ingredients. Only made once. Lol

My parents own a restaurant and so a perk of that when you work for them is never having to cook evening meals!! Tonight I had seafood linguine ^_^

Tonight my husband cooked sausage in a gravy. The gravy had onions, tomato sauce, rotel and salt and pepper. It was served over rice, along with field peas and cucumbers.

So I absolutely love cooking but since this thread started I haven’t made anything noteworthy. Life has been busy. Tonight I made a late dinner just for myself that was inspired by random food in my fridge. I often tell people that I cook because I love to eat. I really enjoy making things just the way I like them because I would never find them that exact way in a restaurant. I love make/build your own sandwiches, omelettes, pizza, pasta, burgers, etc. Tonight I made a version of a Monte Cristo but really the only thing it had that resembled the classic version of this sandwich is the bread dipped in egg and fried. Mine had turkey and cheddar instead of the ham and Swiss. I also added avocado, spinach, red onion, and mayo. It was delicious. Attachment Deleted
