In most stories, I say start at the place where the plot really begins, with the interesting and inciting incident, where things for the protagonist are just starting to change.
With this, however, you might want to "start at the beginning" as they say and go back as far as you can. It will give you more "episodes" so the story can go on for many seasons and people can hop in wherever and go back to the beginning if they like it.

LOL Yeah, I know. The problem is the beginning is sooo far back!! I have been writing this pretty much for twenty years, and I could theoretically start when Kai was a baby, because I know his entire life story from before he was born until the present, pretty much...
What I'm thinking is maybe rewriting/filling in some of what happened starting in 2000 after Kai had his transplant, when he first met Re. We could see how they fell in love and how he met his best friend, Rick, then maybe skip forward a bit... With occasional flash backs to his past...
