I'm having the same thing I have every weeknight. A small salad consisting of broccoli, cucumber, and a small amount of (unsalted) sunflower seeds sprinkled on. That seems excessively healthy. No carb energy or protein? How are you sustained on this? And why no salt? Last meal I cooked was mussels that I smoked, mixed into red sauce with bacon and linguine. My plan for this week is that on Thursday I'm going to make tandoori chicken on the grill with curried potatoes and some kind of vegetable, probably cabbage.
That menu sounds amazing.

Made brown rice cooked in coconut milk, ginger, curry and garlic with a little grilled chicken tonight. Was yummy!

That sounds so good! I also like all kinds of Asian food and eat it all the time. My husband and I both love to cook but with two toddlers family dinners have become kind of tricky. They are not picky eaters but my son has serious food allergies so that significantly limits what we can have, also we can't have a lot of pre-packaged things because of cross-contamination in manufacturing. I'm lactose intolerant so between the two of us a lot of basic ingredients are off the menu. Also we all have different preferences. We make a lot of things from scratch, both because we like to and as a necessity to avoid allergens. Right now it's about 50/50 enjoyment vs drudgery. And when I say everything, I mean even basics like bread and things like ketchup. I got pretty good at yeast bread and sourdough, but it's just too much work. I found a basic soda bread recipe I really like so that's been my go-to lately.

Tonight we are having meatloaf, mac and Cheese, rolls and coleslaw. My youngest loves meatloaf. We all like carbs. None of the kids will eat the coleslaw.

I mix 2 lbs of ground beef with a packet of meatloaf seasoning, breadcrumbs, an egg and some ketchup. I mix it really well and then bake it at 350 for about one and a half hours. I make 2 smaller loves so it bakes faster.

I’ve been on vacation in Florida all week and doing a bit of fishing. Tonight we’re grilling a black drum, a speckled trout and a mangrove snapper in a banana leaf. 😊

Got me some crab meat to go with Mac n' Cheese. I saw it put together in a well known frozen-food outlet in a 'luxury' meal and thought "sod that, I'll do m'own".
It could go either way. I mean I like crab, and I like Mac n' Cheese but whether they go together or not was too intriguing an idea not to do at least once.
I mean, our aquatic friends do go well with both pasta and cheese, but crab doesn't immediately spring to mind.

Actually I had the same experience with muffins when I had to make plenty of them for my twins to bring them to school on their last birthday. A true nightmare experience that was! Everyone told me muffins were the easiest, but everything was sticky in the kitchen, including myself. Never again! Tonight is rice with fried salmon, salad, red beans, cucumber and pepper as usual.

I have learned one thing today making pancakes is not my thing😂never making it again Though pancake is the easiest! Check out Francis there, he‘ll sure have some easy pancakes recipe up there, too... I can't believe I'm in the cooking thread...I don't like cooking very much. I do it because I have to, at least sometimes and when I do cook full on, I'm usually pretty good at it but I just don't like doing it. But that being said, I am cooking a Mediterranean Fish Stew for dinner tonight, so far it tastes yummy with my spoon taste test. I will serve it with crunchy French Bread. And even though I'm German, I actually don't know how to cook German very good. I'm probably better at Southern kitchen, stuff like Gumbo or Creole Meat Loaf or my French Quarter deviled eggs are always a hit, lol
