A couple of days ago I was trimming the bamboo in my yard, and noticed a fat squirrel was eating some of the new shoots. It looked super tasty, so I brought some inside and fried it up in some garlic. So good! I've never had fresh bamboo before, only canned. It tasted so much more complex than I expected. Had it with tempeh and home made spicy pickled carrots over some rice, and it was soooo good. Now I'm considering getting a big planter for some bamboo that's actually bred for eating, because the decorative stuff in the yard had very little edible material on it. It looks fantastic, but I am confused. So the bamboo is the Green stuff there? I‘ve never seen it in this shape before. Interesting. So great you can even grow it in your garden!

I started a new job and often get home at 6 or 7 pm and want to have something easy and healthy for dinner. I decided to make one dinner with 4 servings over the weekend and have them available or to take for lunch or eat for dinner throughout the week. First up was a taco salad from the Body for Life cookbook. Lean ground turkey, beans in chili sauce, spinach, reduced fat cheddar, onion, cilantro, tomato, 1/4 of an avocado, jalapeño, salsa, fat free sour cream, and some crumbled corn chips. I cook for my Grandmother every night, and my doctors tell me I'm a vegetarian now so I've been doing a lot of steamed vegetable dishes.

Thats awesome. I bet your dog would like it even better fried with ginger and chili too. One time my dog had been puking so my vet suggested giving her rice and ground turkey. She thought it was absolutely amazing. She loves anything that's not dog food including a wide variety of fruits and vegetables.

myrrh , your dog sure has a luxury life! And he‘s cute, too. Actually my sister‘s dog is a vegetarian. He lacks some enzyme to digest meat and loves cucumber the most.

It's not so bad, dave78 . Inspo for this came from my dog, actually. He's got autoimmune issues and can only eat home-cooked food. It took a lot of trial and error to figure out what he can eat, and now he exists pretty happily on a diet of sweet potato, oats, and turkey. I make a HUGE pot (he's 45lbs, not small) of that glop every weekend, and it always smells soooo good. So, yesterday, I scooped some out before the turkey addition, and fried it into little cakes with ginger and chili powder. Had it with a heap of red cabbage and spicy mustard. It was pretty tasty, but I'd up the oat content next time to make it a little more toothy. Still, not bad for dog food! Bonus doggo: That looks like a good boy you've got there! What's his name? Thank you for the encouragement. I had been following the 3 basic food groups (cigars, scotch, and bacon cheeseburgers) before they suggested that vegetables were a viable alternative. Tonight I'm making baked chicken, zucchini, stuffing and cranberry sauce. All the ingredients are stacked on top of each other in cute little convenient servings. I made one of those easy powder+water chicken gravy packets to go with it too. It's another Body For Life recipe that I'm making to have easy dinners/lunches for the week. I'll probably have one of the servings tonight though. Not sure if its picture worthy yet because its still in the oven.

For the last two days I had quinoa salad with cucumber, tomatoes, olives and basil. Even though it was really awesome, I’m looking forward to tonight since I’ll be out for dinner at a Chinese buffet with two friends 😊

Tonight we had beef steak with rice and gravy, fresh corn from the garden and deviled eggs. My husband cooked it and it was delicious.

Frozen bananas go into a food processor, and out comes really fabulously creamy and gooey "nice cream." I used berries and cocoa powder to make a big batch of Neapolitan cuz I fancy. That looks amazing! I don’t particularly like ice cream but this seems so appealing! Is it as easy as doing what you said? Any sweeteners needed? Or, just naturally sweet with the banana? Did you use vanilla flavoring as well?

Damn y'all with ya Ice-cream temptations, aside from Vanilla. Mint and Chocolate chip is always a winner, but as much as I like bananas, mixing them with mint just doesn't seem right.
Anyway, inspired by today's surprising Google Doodle celebrating the falafel, I'm tempted to make one tonight. A local supermarket near me has a sweet potato based falafel mix that seems interesting.

One of my passions is cooking, I have a small normal go to recipes I go through but when things get repetitive I make something new. If I have no idea what to make I go to the grocery store and get an idea as I go through the aisles. Try something you have not had, something out of your normal comfort zone. Saute a few handfuls of mushrooms then toss in some curry. Maybe make a bread bowl fill it with a beef stew. If you feel stuck recipe wise you can PM me if you like.

Burgers and corn grilled over lump charcoal and dried coffee grounds. If we get any sun through the clouds I'd like to boil some broccoli and cauliflower with garlic sauce in the solar oven. Looks I'll be grilling in a bit of rain instead.
